Extra sails will do nothing for you. However, if you have say anything equal to or up to a 2 x 4 to a 4 x 4 one extra sail will help it go faster. If you have anything bigger then a 4 x 4 then 3 sails will increase the speed. However I would cap it at that.

Also, rafts are represented really poorly in the game's save file, and a sufficiently large raft will make your game take a full minute to save.
